Ingredients
- – 4 whole bell peppers (680g)
- – 1 tablespoon olive oil (15 ml)
- – 1 small onion diced (120g)
- – 1 pound lean ground beef (450g)
- – 1 15 ounce can of diced tomatoes (425g)
- – 1 8 ounce can of tomato sauce (225g)
- – 2 cups rice cooked (390g)
- – 1 tablespoon Italian Seasoning (15 ml)
- – 1 teaspoon garlic powder (5g)
- – salt and pepper
- – 2 cups cheddar cheese shredded (200g)
Instructions
- To start, cut off the tops of the peppers and clear out any seeds or membranes.
- In a medium saucepan over medium-high heat, pour in the olive oil and add the diced onion. Cook until they are nearly soft.
- Add the lean ground beef, breaking it apart and cooking until it’s browned.
- Stir in the diced tomatoes, tomato sauce, cooked rice, Italian seasoning, garlic powder, and season with salt and pepper.
- Fill the hollowed peppers with this mixture and arrange them in the air fryer basket.
- Set the air fryer to 360 degrees and cook the peppers until they are soft, approximately 10 minutes. Top with shredded cheddar cheese and continue cooking for an extra 2-3 minutes.
