Ingredients

  • – 4 whole bell peppers (680g)
  • – 1 tablespoon olive oil (15 ml)
  • – 1 small onion diced (120g)
  • – 1 pound lean ground beef (450g)
  • – 1 15 ounce can of diced tomatoes (425g)
  • – 1 8 ounce can of tomato sauce (225g)
  • – 2 cups rice cooked (390g)
  • – 1 tablespoon Italian Seasoning (15 ml)
  • – 1 teaspoon garlic powder (5g)
  • – salt and pepper
  • – 2 cups cheddar cheese shredded (200g)


Instructions

  1. To start, cut off the tops of the peppers and clear out any seeds or membranes.
  2. In a medium saucepan over medium-high heat, pour in the olive oil and add the diced onion. Cook until they are nearly soft.
  3. Add the lean ground beef, breaking it apart and cooking until it’s browned.
  4. Stir in the diced tomatoes, tomato sauce, cooked rice, Italian seasoning, garlic powder, and season with salt and pepper.
  5. Fill the hollowed peppers with this mixture and arrange them in the air fryer basket.
  6. Set the air fryer to 360 degrees and cook the peppers until they are soft, approximately 10 minutes. Top with shredded cheddar cheese and continue cooking for an extra 2-3 minutes.
