Ingredients

  • 4 (113-170 g) chicken breasts
  • 2 Tablespoons (30 ml) vegetable oil
  • 1/2 teaspoon (3 ml) EACH Italian seasoning, garlic powder, chili powder, black pepper, salt
  • 4 oz (113 g) beef bacon (at room temp)
  • 1/4 cup (60 ml) Parmesan cheese
  • 1/4 cup (60 ml) mozzarella cheese or favorite cheese
  • Optional add-in: 2 Tablespoons (30 ml) chopped sundried tomatoes, or pesto, or feta, or green chilis, or 1 cup (240 ml) chopped spinach


Instructions

  1. Warm up the air fryer to 375ºF. In a small bowl, mix together the vegetable oil, Italian seasoning, garlic powder, chili powder, black pepper, and salt, then set this aside. In a different bowl, prepare the stuffing by blending the beef bacon, Parmesan cheese, mozzarella cheese, and 2 tablespoons of any optional add-in you prefer.
  2. Position the chicken breasts flat on a cutting board. Using one hand to steady the chicken, carefully cut into each breast about three-quarters through, ensuring you do not slice completely.
  3. Place a quarter of the cheese mixture into the center of each chicken breast and fold the meat to enclose the filling securely. Coat all sides of the chicken with the oil and seasoning blend.
  4. Move the stuffed chicken breasts to the air fryer basket and cook them for 20 minutes, remembering to turn them over halfway through. Ensure they are fully cooked when the internal temperature reaches 165ºF.

Notes

  • Add sundried tomatoes, pesto, feta, green chilis, or spinach to the cheese mixture for a flavorful twist.
  • Carefully cut the chicken breasts without slicing all the way through to keep the filling intact while cooking.
  • Flip the stuffed chicken breasts halfway through cooking for an even, crispy exterior.
