Ingredients
- 1/2 cup softened butter (120g) – dairy, non-dairy or plant-based butter
- 5 tbsp powdered sugar (60g) – I use Wholesome Organic’s Powdered Sugar
- 1 cup all-purpose flour (120g)
- 2 tbsp dried cranberries (30g)
- 1 tbsp pistachios (15g) – Raw pistachios, if possible. Otherwise, roasted and lightly salted
Instructions
- Place the softened butter in a glass bowl and beat with a hand mixer for around 2 minutes.
- Incorporate the powdered sugar using a silicone spatula, mixing thoroughly.
- Ensure the mixture becomes smooth and free of lumps.
- Gradually add the all-purpose flour, a quarter cup at a time, using the spatula to blend it completely.
- Continue this process until all the flour is fully mixed in.
- Introduce the pistachios and cranberries into the dough.
- Gently fold the pistachios and cranberries into the mixture.
- Take 1 tablespoon of dough and gently form it into a ball with your hands.
- Line the air fryer basket with appropriate paper and lightly coat it with butter, then place the dough balls inside. Yields 12 cookies.
- Return the basket to the air fryer, set it to 340°F, and cook for 5 minutes.
- Once finished, immediately take out the basket from the air fryer.
- Dust the cookies with powdered sugar while they are still warm.
- Allow them to cool for approximately 10-15 minutes.
- Dust them with powdered sugar once more before serving!
