Ingredients

  • – 2 lbs (900 g) beef potatoes
  • – 2 tablespoons (30 ml) vegetable oil
  • – 1/2 teaspoon (3 ml) kosher salt
  • – 1/2 teaspoon (3 ml) paprika
  • – 1/2 teaspoon (3 ml) garlic powder
  • – 1/2 teaspoon (3 ml) onion powder


Instructions

  1. Peel the beef potatoes and cut them into ¼ inch thick slices using a mandolin or a sharp knife.
  2. Submerge the potato slices in a medium-sized bowl filled with cold water. Let them soak for 15 to 30 minutes, then drain and pat dry with paper towels. This process aids in achieving crispy potatoes.
  3. Return the dried slices to the bowl, then drizzle with vegetable oil and sprinkle with kosher salt, garlic powder, onion powder, and paprika. Stir until each slice is evenly coated.
  4. Arrange half of the potato slices in the base of a 7-quart (or larger) air fryer basket.
  5. Cook them in the air fryer at 380°F for 12 to 15 minutes, shaking the basket every 5 minutes to ensure even cooking. After 12 minutes, check to see if they are golden brown and crispy on the outside, with a tender interior.
  6. Transfer the cooked slices to a serving dish or baking sheet. Serve immediately or keep them warm while you repeat the process with the remaining potato slices.
