Ingredients

  • 450 g jumbo shrimp, peeled and deveined (1 lb)
  • 1 zucchini
  • 1 red bell pepper
  • 1 tbsp (15 ml) vegetable oil
  • 1 tbsp (15 ml) garlic paste or fresh minced garlic
  • 1 tbsp (15 ml) Italian seasoning
  • 1/4 cup (60 g) grated cheese
  • salt, pepper


Instructions

  1. Use paper towels to dry the shrimp thoroughly, then transfer them to a large mixing bowl.
  2. Cut the zucchini into rounds that are 1/4 inch thick and slice the red pepper into 1/4 inch strips. Add these to the bowl with the shrimp.
  3. Drizzle the vegetable oil, garlic paste, Italian seasoning, grated cheese, and a pinch of salt and pepper into the bowl. Stir everything until well combined.
  4. Arrange the shrimp and vegetables in the air fryer basket. If you have a smaller air fryer, consider cooking in two separate batches. Set the air fryer to 390°F (approximately 199°C) and cook for 15 minutes, shaking the basket once halfway through.
  5. Enjoy the dish as is, or pair it with buttered pasta or fettuccine Alfredo.
