Description
Quick and flavorful air fryer shrimp tacos with crispy shrimp and fresh toppings, including mango corn salsa.
Ingredients
- 1.5 lbs raw jumbo shrimp, tails off and deveined
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp salt
- 6 snack-size flour tortillas
- Shredded cabbage
- ½ container of canned corn (150g)
- 1 small mango, chopped (140g)
- 2 small vine tomatoes, chopped (200g)
- ½ red onion, finely sliced (100g)
- 1 cup fresh cilantro
- Juice of 1 lime
Instructions
- Preheat air fryer to 400°F (200°C).
- Wash and pat dry the shrimp, then season with smoked paprika, ground cumin, chili powder, and salt.
- Place seasoned shrimp in the air fryer basket in a single layer and air fry for 6-8 minutes until pink and opaque.
- While shrimp cooks, prepare the mango corn salsa by combining chopped mango, canned corn, diced tomatoes, sliced red onion, and chopped cilantro in a bowl. Squeeze lime juice and mix well.
- Warm tortillas in the microwave or on a pan.
- Assemble tacos by layering shrimp, shredded cabbage, and topping with mango corn salsa.
Notes
Marinate shrimp for 20-30 minutes beforehand for deeper flavors. Use fresh produce for the best taste.
