Description

Quick and flavorful air fryer shrimp tacos with crispy shrimp and fresh toppings, including mango corn salsa.


Ingredients

  • 1.5 lbs raw jumbo shrimp, tails off and deveined
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • 6 snack-size flour tortillas
  • Shredded cabbage
  • ½ container of canned corn (150g)
  • 1 small mango, chopped (140g)
  • 2 small vine tomatoes, chopped (200g)
  • ½ red onion, finely sliced (100g)
  • 1 cup fresh cilantro
  • Juice of 1 lime


Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Wash and pat dry the shrimp, then season with smoked paprika, ground cumin, chili powder, and salt.
  3. Place seasoned shrimp in the air fryer basket in a single layer and air fry for 6-8 minutes until pink and opaque.
  4. While shrimp cooks, prepare the mango corn salsa by combining chopped mango, canned corn, diced tomatoes, sliced red onion, and chopped cilantro in a bowl. Squeeze lime juice and mix well.
  5. Warm tortillas in the microwave or on a pan.
  6. Assemble tacos by layering shrimp, shredded cabbage, and topping with mango corn salsa.

Notes

Marinate shrimp for 20-30 minutes beforehand for deeper flavors. Use fresh produce for the best taste.
