Ingredients
- – 680g large shrimp, peeled, deveined and tails off
- – 1 large lime (juice)
- – 3/4 tsp (4 ml). salt
- – 30ml olive oil
- – 30ml BBQ seasoning, I used Dash, no salt seasoning (from Walmart)
- – 4 cloves garlic, minced
- – 1/2 tsp (3 ml). black pepper, or more to taste
- – 1 large zucchini, Cut lengthwise and sliced into 1/4 inch pieces (see photo)
- – 1 large yellow squash, Cut lengthwise and sliced into 1/4 inch pieces (see photo)
- – 1 large red pepper, cubed
- – 1 small onion, cubed
- – 225g cremini mushrooms, OPTIONAL
Instructions
- Set your air fryer to a temperature of 400°F.
- In a mixing bowl, combine the shrimp with lime juice, salt, minced garlic, olive oil, and BBQ seasoning. You can let it sit for 30 minutes to enhance the flavor, but this step is optional.
- Incorporate the zucchini, yellow squash, red pepper, and onion into the shrimp mixture, ensuring everything is well-coated.
- Place half of the shrimp and vegetable mixture into the air fryer basket and cook for 8 minutes. During this time, shake the basket once or twice to ensure even cooking. If you prefer a more cooked texture, consider extending the cooking time by 1-2 minutes.
- Once cooked, take the contents out of the air fryer and place them onto a serving dish. Add a touch of freshness by decorating with chopped parsley and lime wedges.

- Consider enhancing the umami flavor by including optional cremini mushrooms in the shrimp and vegetable mix before air frying.
- Boost the spiciness by sprinkling red pepper flakes or cayenne pepper on the shrimp and veggies before cooking.
