Ingredients

  • 400g boneless, skinless chicken thighs, roughly chopped (14.1 oz)
  • 1½ tsp cornstarch (5.6 g)
  • 3/4 tsp (4 ml) black pepper
  • 1 tsp (5 ml) Chinese five-spice powder
  • 1 red chili, finely chopped
  • 2 red peppers, roughly chopped
  • 6 spring onions, 4 roughly chopped, 2 sliced on the diagonal
  • 1½ tsp vegetable oil (7.1 ml)
  • 2 pak choi leaves, separated
  • ½ tbsp agave nectar (7.5 ml)
  • 1 tbsp (15 ml) rice vinegar
  • cooked rice and soy sauce, to serve


Instructions

  1. Preheat the air fryer to 200°C. Mix the chopped chicken thighs with cornstarch, ¾ teaspoon of black pepper, and the Chinese five-spice. Place the mixture in the air fryer basket and cook for 15 minutes until fully cooked. Transfer to a plate and keep aside.
  2. In a bowl, combine the chopped red chili, red peppers, and roughly chopped spring onions with vegetable oil. Pour this into the air fryer basket and cook for 10 minutes. Add the pak choi leaves and continue cooking for an additional 5 minutes.
  3. Move everything from the air fryer into a bowl, including the chicken, agave nectar, and rice vinegar. Mix thoroughly, then put everything back into the air fryer for a further 2 minutes.
  4. Sprinkle the sliced spring onions over the dish and serve alongside the prepared rice and soy sauce.

Notes

  • Marinate chicken thighs in Chinese five-spice and black pepper for at least 30 minutes before cooking for enhanced flavor.
  • Add carrots, mushrooms, or snap peas to stir-fry for extra texture and nutrition.
  • Adjust spiciness by adding more or less red chili according to your preference.
