Ingredients
- 4 Boneless Skinless Chicken Thighs (about 170g each)
- 1/4 cup (60ml) Lemon Juice (about 1 large lemon)
- 1/4 cup (60g) Coarse Ground Mustard or Dijon Mustard
- 1/4 cup (60ml) Beef Fat Free Balsamic Vinaigrette
- 1 tsp (5 ml) Kosher Salt
- 1 tsp (5 ml) Dried Rosemary Leaves
- 1/2-1 tsp (8 ml) Black Pepper
Instructions
- Combine all ingredients, except for the chicken, in an 8×8 inch baking dish or a shallow container that can be sealed. Immerse the chicken thighs in the mixture. Seal the container and place it in the refrigerator for a minimum of 2 hours.
- Put two of the marinated chicken thighs into the basket of an air fryer and set the temperature to 400ºF. Cook them for 12-14 minutes, ensuring each piece reaches an internal temperature of 165ºF in the thickest part.
- Repeat the cooking process for the other two thighs or store them in the refrigerator for future use. If cooking them immediately after the first batch, note that they might cook slightly quicker, by 1-3 minutes.
Notes
- Consider using Dijon mustard for a more intense flavor.
- Adjust black pepper amount to suit your spiciness preference.
- Flip chicken thighs halfway through air fryer cooking for even browning.
