Ingredients

  • 3 tablespoons (45 ml) soy sauce
  • 1 tablespoon (15 ml) rice vinegar
  • 2 cloves garlic, minced (about 2 teaspoons (10 ml))
  • 2 teaspoons (10 ml) grated fresh ginger
  • 1 teaspoon (5 ml) honey
  • 1/2 teaspoon (3 ml) chili paste (sriracha, or 1/4 teaspoon (1 ml) red pepper flakes)
  • 1 pound (450 g) skin-on salmon fillet* at room temperature, cut into 3-4 portions
  • 2 teaspoons (10 ml) vegetable oil
  • Chopped green onions for serving
  • Toasted sesame seeds for serving


Instructions

  1. Position a rack in the middle of your oven and set it to preheat at 425 degrees F. Warm the skillet until a droplet of water sizzles and evaporates rapidly but doesn’t leap around (if it does, the pan is excessively hot).
  2. In a small pot, combine the soy sauce, rice vinegar, garlic, and ginger. Heat until it begins to simmer over medium-high heat, then take it off the heat and mix in the honey and chili paste. Set aside a few spoonfuls of this glaze in a separate bowl for serving later.
  3. Pour the vegetable oil over the salmon and brush it to coat evenly. Lay the salmon skin-side up on the preheated skillet. Allow it to cook for about 3 minutes without moving it, creating a nice crust. When the sides appear opaque and the top starts to change, use a flexible spatula to turn the salmon so it’s skin-side down. Apply the remaining glaze from the pot over the top using a brush or spoon. Quickly transfer the skillet to the oven and bake for 6 minutes (the salmon may look slightly uncooked in the center but will finish cooking while resting). Take it out of the oven and cover with foil. Let it rest for 4 to 5 minutes. Serve right away, garnished with the reserved glaze, chopped green onions, and sesame seeds.
