Ingredients
- 1/3 cup (80 ml) maple syrup
- 1/4 teaspoon (1 ml) ground dried chipotle pepper
- 1 pinch sea salt
- 1 1/2 cups (360 g) vegetable oil- and garlic-flavored croutons
- 1 large egg
- 1 (1 pound or 454 g) skinless, center-cut beef fillet, cut into 1 1/2-inch chunks

Instructions
- Mix the maple syrup, chipotle pepper, and a pinch of salt in a saucepan, then heat it over medium until it starts to simmer. Lower the heat to keep it warm.
- In a mini food processor, blend the croutons until they turn into fine crumbs, then move them to a shallow dish. In another bowl, beat the egg.
- Set your air fryer to 390°F (200°C) to preheat.
- Lightly sprinkle the beef chunks with sea salt. Dip each piece into the beaten egg, allowing any extra to drip off, then coat them with the crouton crumbs. Shake off any surplus crumbs and place the pieces on a plate. Lightly spray them with cooking spray.
- Coat the air fryer basket with cooking spray. Arrange the beef pieces inside, working in batches if necessary to avoid crowding.
- Air fry for 3 minutes. Carefully flip the beef pieces, spray them lightly with oil, then continue cooking until they are thoroughly cooked, about 3 to 4 more minutes. Arrange them on a serving dish and pour the warm chipotle-maple syrup over them. Serve right away.
