Ingredients

  • 2 large eggs
  • 1/4 cup (60 ml) chopped red onion
  • 1/4 cup (60 ml) chopped dill
  • 2 tablespoon (30 ml) s mayo, I like Sir Kensington
  • 2 teaspoon (10 ml) Dijon mustard
  • 1 teaspoon (5 ml) Old Bay seasoning
  • 12 ounce (340 g) s cooked or canned wild salmon, flaked (from 1 lb (454 g) salmon or 2 6-ounce cans)
  • 1/2 cup (120 ml) panko, plain or gluten-free panko (or matzo for passover)
  • Olive oil spray
  • Lemon wedges, for serving


Instructions

  1. Place a sheet of air fryer parchment paper in the basket, or coat it with oil spray.
  2. In a medium bowl, blend together the eggs, chopped red onion, dill, mayonnaise, Dijon mustard, and Old Bay seasoning. Stir well.
  3. Incorporate the flaked salmon and panko into the mixture and mix thoroughly.
  4. Chill in the freezer for 10 minutes to firm up the mixture. (Add an extra tablespoon of panko if it’s too moist.)
  5. Shape the mixture into 6 compact patties and place them in the air fryer basket.
  6. Set the air fryer to 400°F and cook the patties for 8 to 10 minutes, turning them over halfway through, until they are golden.
  7. Present the salmon cakes on a bed of greens, in potato buns, or in bowls, and drizzle with lemon juice before serving. Makes 6 patties.
