Ingredients
- 2 large eggs
- 1/4 cup (60 ml) chopped red onion
- 1/4 cup (60 ml) chopped dill
- 2 tablespoon (30 ml) s mayo, I like Sir Kensington
- 2 teaspoon (10 ml) Dijon mustard
- 1 teaspoon (5 ml) Old Bay seasoning
- 12 ounce (340 g) s cooked or canned wild salmon, flaked (from 1 lb (454 g) salmon or 2 6-ounce cans)
- 1/2 cup (120 ml) panko, plain or gluten-free panko (or matzo for passover)
- Olive oil spray
- Lemon wedges, for serving
Instructions
- Place a sheet of air fryer parchment paper in the basket, or coat it with oil spray.
- In a medium bowl, blend together the eggs, chopped red onion, dill, mayonnaise, Dijon mustard, and Old Bay seasoning. Stir well.
- Incorporate the flaked salmon and panko into the mixture and mix thoroughly.
- Chill in the freezer for 10 minutes to firm up the mixture. (Add an extra tablespoon of panko if it’s too moist.)
- Shape the mixture into 6 compact patties and place them in the air fryer basket.
- Set the air fryer to 400°F and cook the patties for 8 to 10 minutes, turning them over halfway through, until they are golden.
- Present the salmon cakes on a bed of greens, in potato buns, or in bowls, and drizzle with lemon juice before serving. Makes 6 patties.
