Description

Ingredients

  • 2 tsp (10 ml) coarse salt
  • 1 tsp (5 ml) freshly ground black pepper
  • 1/2 tsp (3 ml) dried thyme
  • 1/2 tsp (3 ml) garlic granules
  • 1/2 tsp (3 ml) dried rosemary
  • 1/2 tsp (3 ml) mustard powder or brown sugar
  • 2 1/2 lbs (1.2 kg) roasting beef joint check it fits into your Air fryer
  • 3 tbsp (45 ml) olive oil


Instructions

  1. Take the beef out of the refrigerator and dry it with a paper towel. Allow it to sit at room temperature for half an hour. Ensure it fits in your air fryer; if it’s too large, cut it in half.
  2. While waiting, heat the air fryer to 400°F (200°C) for 10 minutes. Combine the spices and herbs, then coat the beef with olive oil. Apply the spice mixture evenly over the meat.
  3. Optionally, place a liner in the air fryer basket and set the beef inside. Cook for 10-15 minutes. This high heat will form a flavorful crust on the outside, locking in the juices similar to searing in a pan before oven roasting.
  4. Take out the air fryer basket and flip the beef over. Lower the temperature to 350°F (180°C) and continue cooking for an additional 30 minutes.
  5. Begin checking the beef’s internal temperature with a thermometer by inserting it into the thickest part. Refer to the recipe notes for guidance on achieving your preferred doneness, adding five-minute intervals if needed. Keep in mind that the temperature will rise slightly as it rests. I usually target medium rare (130-134°F / 55-57°C).
  6. Once cooked to your preference, transfer the beef to a warm serving dish and cover it loosely with foil. Allow it to rest for 20-30 minutes before slicing it against the grain and serving with your chosen accompaniments.
