- 2 cups (480 ml) old-fashioned rolled oats
- 1/2 cup (120 ml) chopped nuts, such as almonds, pecans, or walnuts
- 1/4 cup (60 ml) pumpkin seeds, pepitas
- 1/4 cup (60 ml) unsweetened shredded coconut
- 2 tablespoons (30 ml) vegetable oil
- 1/4 cup (60 ml) pure maple syrup
- 1 tablespoon (15 ml) pumpkin pie spice
- 1/2 teaspoon (3 ml) vanilla extract
- 1/4 teaspoon (1 ml) salt
- 1/2 cup (120 ml) dried cranberries or other dried fruits, optional, for added sweetness and texture
Instructions
- Warm up your air fryer to 325°F (160°C) for a short while.
- In a big bowl, blend the old-fashioned rolled oats, chopped nuts, pumpkin seeds, and shredded coconut until they are well mixed.
- In another bowl, combine the vegetable oil, pure maple syrup, pumpkin pie spice, vanilla extract, and salt by whisking them together until unified.
- Drizzle the wet blend over the dry mix and stir until the oats and nuts are thoroughly coated.
- Move the coated mixture into the air fryer basket, arranging it in a single layer.
- You might need to cook the granola in multiple rounds depending on your air fryer’s capacity to ensure it cooks evenly. Avoid overcrowding.
- Cook the granola at 325°F (160°C) for 10-15 minutes, stirring every 5 minutes to promote even browning. Keep a watchful eye to prevent burning.
- If you opt to include dried cranberries or other fruits, mix them in once the granola is cooked and has cooled a bit.
- Let the granola cool down completely before placing it in a sealed container for storage, as it will continue to crisp up.
- Enjoy the granola as a crunchy addition to yogurt, milk, or smoothie bowls, or savor it as a tasty snack by itself.
Notes
- Toast the chopped nuts in a dry skillet over medium heat before adding them to the granola for a richer flavor.
- Customize the dried fruit options with raisins, apricots, or cherries according to your preference.
- Experiment with cinnamon, nutmeg, or cardamom to create unique flavor profiles for your granola.
