Ingredients
- 1 large flatbread (I bought a huge garlic and herb flatbread from Tesco) or two medium-sized flatbreads
- 1 tomato, cut into 6 wedges
- 1/2 red onion, sliced
- Small bunch of parsley, roughly chopped
- 2 chicken thighs (skinless and boneless), sliced into chunks
- 1 teaspoon (5 ml) garlic, minced
- 1/2 tablespoon (8 ml) mixed herbs
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) black pepper
- 1/2 lemon, juiced
- 1 tablespoon (15 ml) olive oil
- 2 large potatoes, sliced into 1 cm thick wedges
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon (5 ml) salt
- 1 tsp (5 ml) black pepper
- 2 tablespoon (30 ml) greek yoghurt
- 1/2 cucumber, grated and squeezed to remove any water
- 2 tsp (10 ml) garlic, minced
- 1/2 lemon, juiced
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) black pepper
Instructions
- Begin by soaking the chicken chunks in the marinade mixture and let them sit for 20 minutes.
- While waiting, cut the potatoes into wedges about 1 cm thick and coat them with olive oil, salt, and pepper.
- Place the potato wedges into one section of your Ninja Foodi Air Fryer.
- Thread the marinated chicken onto two skewers and position them in the other section of the Ninja Foodi Air Fryer.
- Set the Ninja Foodi Air Fryer to 200°C/390°F and cook for 16 minutes using the MATCH function to ensure both the chicken and potatoes finish at the same time. Remember to flip them halfway through the cooking process. You’ll get crispy chicken and perfectly cooked homemade fries.
- Carefully remove the chicken from the skewers, cutting them into small chunky pieces suitable for assembling gyros.
- In the meantime, combine all the tzatziki components in a bowl. Be sure to press the cucumber to eliminate excess water! Adjust the seasoning according to your taste.
- Prepare the red onion, tomato, and parsley by chopping them up.
- Warm up or lightly toast the flatbread, then spread it with tzatziki, followed by layers of chicken, fries, tomatoes, red onion, parsley, and another layer of tzatziki. Roll up the gyros (using baking paper can help keep everything together) and then serve and enjoy!

- Consider marinating the chicken longer to enhance its flavor.
- Ensure the potato wedges are evenly coated with olive oil, salt, and pepper for consistent cooking.
- Be sure to squeeze the grated cucumber thoroughly to prevent the tzatziki from becoming too watery.
