Ingredients

  • 2 Tablespoons sweet chili sauce (30 ml)
  • 1 Tablespoon soy sauce (15 ml)
  • 1 Tablespoon Sriracha, or to taste (15 ml)
  • Juice and zest of one lime
  • 1 teaspoon granulated garlic (5 g)
  • 1 Tablespoon minced fresh ginger (15 g)
  • 1/3 cup creamy peanut butter (80 g)
  • Salt, to taste
  • 6 skinless, boneless chicken thighs
  • Cooking spray
  • Hot cooked rice
  • chopped cilantro, sliced scallions, julienne cucumbers, and carrots (optional)
  • chopped salt-free, dry-roasted peanuts (optional)


Instructions

  1. Place the chili sauce, soy sauce, Sriracha, lime zest, lime juice, granulated garlic, minced ginger, peanut butter, and a pinch of salt into a large resealable plastic bag. Massage the bag gently to mix the ingredients thoroughly.
  2. Add the chicken thighs to the bag, eliminating as much air as possible. Rotate and press the chicken inside the bag until each piece is evenly covered in the marinade. Let it sit in the fridge for at least 30 minutes, but no more than 24 hours.
  3. Set the air fryer to 350 degrees F (180 degrees C) or follow the instructions provided by the manufacturer.
  4. Coat the air fryer’s cooking surface lightly with cooking spray.
  5. Remove the chicken pieces from the marinade, letting the excess drip back into the bag. Arrange the chicken in the air fryer in a single layer. Cook for 20 to 22 minutes, flipping them halfway, until a thermometer inserted into the thickest part reads 165 degrees F (74 degrees C).
  6. Pour about 1/2 cup of water into the leftover marinade, stir well, and transfer to a microwave-safe dish. Heat on High in the microwave until it boils, then continue cooking for about 1 more minute, ensuring it doesn’t overflow.
  7. Serve the chicken on a bed of rice, with the sauce on the side for dipping. Optionally, top with chopped cilantro, sliced scallions, julienne cucumbers and carrots, and chopped peanuts.

Notes

  • Marinate the chicken for at least 30 minutes for enhanced flavor penetration.
  • Flip the chicken halfway through cooking in the air fryer for even browning.
  • Utilize leftover marinade as a delicious sauce on the side after heating it up.
