Ingredients
- 2 large boneless skinless chicken breasts (about 450g)
- 60 ml (1/4 cup) mayonnaise
- 2 cloves garlic, minced
- 240 ml (1 cup) seasoned Panko bread crumbs
- 60 ml (1/4 cup) grated non-alcoholic cheese
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) pepper
- Vegetable oil spray
- Fresh parsley, finely chopped, for garnish
Instructions
- Set the air fryer to a temperature of 390 degrees F to preheat.
- Slice each chicken breast in half, creating four thinner pieces. Place one piece between plastic wrap layers and flatten it evenly with a meat mallet. Do this with each piece of chicken.
- Mix the mayonnaise and minced garlic in a small bowl. Cover the chicken pieces with this garlic mayo mixture.
- Combine the Panko crumbs, grated cheese, salt, and pepper in a shallow dish. Press each chicken piece into the crumb mixture to coat one side, then turn over to coat the other side. Repeat for all chicken pieces.
- Spray the air fryer basket with a vegetable oil spray. Avoid using PAM as it may harm some baskets.
- Arrange the chicken pieces in the basket and cook for 8 minutes. Turn them over and continue cooking for an additional 5-7 minutes until they reach a golden and crispy texture. Avoid overcrowding by cooking in batches if necessary.
- Take the chicken out and serve it warm, garnished with extra cheese and chopped parsley.
