Ingredients
- – 2 large boneless and skinless chicken breasts, sliced horizontally to make 4 fillets
- – 1 tablespoon (15 ml) fresh oregano or parsley leaves, to garnish
- – 1/4 cup (60 g) mayonnaise
- – 2 minced garlic cloves
- – 1/2 teaspoon (2.5 ml) onion powder
- – 1 teaspoon (5 ml) Italian seasoning
- – 1/2 teaspoon (2.5 ml) beef powder, optional
- – salt, to taste
- – 1 cup (100 g) fresh grated parmesan cheese
- – 1/2 cup (50 g) breadcrumbs
Instructions
- Heat up your air fryer to 390°F (199°C).
- Cut the chicken breasts in half lengthwise to create four fillets.
- Lay the chicken on a board, cover with cling film, and flatten evenly using a rolling pin or meat mallet.
- Combine mayonnaise, minced garlic, onion powder, Italian seasoning, beef powder (if using), and a pinch of salt in a small bowl. Spread this blend over each piece of chicken.
- In a separate shallow dish, blend together the breadcrumbs and grated parmesan cheese. Coat each chicken piece in this mixture, pressing down gently to ensure it sticks, then turn over and repeat. Shake off any extra crumbs.
- Arrange the chicken fillets in the air fryer basket and cook for 10 to 12 minutes, until they are golden and reach an internal temperature of 165°F. At the halfway mark, remove the basket and carefully flip the chicken with tongs.
