Ingredients
- 2 (225g) boneless, skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 1/3 cup (40g) all-purpose flour
- 2 large eggs
- 1 cup (60g) panko bread crumbs
- 1/4 cup (25g) finely grated Parmesan
- 1 teaspoon (5 ml) dried oregano
- 1/2 teaspoon (3 ml) crushed red pepper flakes
- 1/2 teaspoon (3 ml) garlic powder
- 1 cup (240ml) tomato-based pasta sauce
- 1 cup (120g) shredded cheese
- Chopped fresh parsley, for serving
Instructions
- Slice the chicken breasts in half horizontally to make four thin slices, then sprinkle both sides with kosher salt and freshly ground black pepper.
- Put the all-purpose flour in a shallow dish, adding a generous pinch of kosher salt and several turns of freshly ground black pepper. In another dish, whisk the eggs until they are well combined. In a third dish, mix together the panko bread crumbs, finely grated Parmesan, dried oregano, crushed red pepper flakes, and garlic powder.
- One at a time, dredge the chicken pieces in the flour, shaking off any extra. Next, dip them in the beaten eggs, letting any extra drip off, and finally coat them with the panko mixture, pressing lightly to ensure an even coating on both sides.
- If needed, work in batches to arrange the chicken in a single layer in the air fryer basket. Cook at 400°F, flipping once, until the chicken is thoroughly cooked, approximately 5 minutes on each side. Spoon tomato-based pasta sauce and sprinkle shredded cheese on top of the chicken. Continue cooking at 400°F until the cheese is bubbly and golden, about 3 more minutes.
- Place the chicken on serving plates and sprinkle with fresh chopped parsley for garnish.
