Ingredients
- 1 pound (454 g) chicken breast cut into 1 inch cubes
- 1 tablespoon (15 ml) low sodium tamari or soy sauce
- 1 tablespoon (15 ml) cornstarch
- 3 tablespoon (45 ml) s plain gluten free breadcrumbs
- 2 cloves garlic minced
- 2 teaspoon (10 ml) fresh grated ginger or 1/2 teaspoon (3 ml) dried
- 1 tablespoon (15 ml) oil
- 1 cup (240 ml) orange juice
- 1 tablespoon (15 ml) orange zest
- 1/4 cup (60 ml) honey see notes
- 1/4 cup (60 ml) low sodium tamari or soy sauce
- 1 tablespoon (15 ml) rice vinegar
- 2-3 teaspoon (13 ml) s sriracha or to taste
- 1 tablespoon (15 ml) cornstarch
- 2 tablespoon (30 ml) s water
Instructions
- Place the pieces of chicken breast into a bowl and coat them with tamari. Allow them to marinate for approximately 15 minutes.
- Set your air fryer to 380°F to preheat.
- Combine the chicken with the cornstarch and breadcrumbs. Adding the breadcrumbs simultaneously with the cornstarch aids in adherence.
- Arrange the chicken in a single layer inside the air fryer. Cook for 10-14 minutes, flipping halfway through. The cooking time will vary based on the thickness of the chicken pieces. Ensure it’s fully cooked when the internal temperature hits 165°F.
- While the chicken cooks, put the minced garlic in a pot with the oil and cook until it turns a light golden color.
- Introduce all the other ingredients except the water and cornstarch, then bring to a gentle simmer.
- Mix the cornstarch with water and pour it into the pot containing the sauce.
- Stir continuously and let it simmer until it thickens. Take it off the heat and let it cool, which will further increase its thickness.
- Once the chicken is ready (make sure to cut through the thickest piece to check for doneness), place it in a bowl and let it cool slightly for a few minutes.
- Drizzle half of the sauce over the chicken and mix well. I prefer adding about 2/3 of the sauce to the chicken, keeping the rest aside for serving.
- Serve immediately, pairing it with steamed broccoli, rice, or enjoy it on its own!
