- 1/2 cup (120 ml) milk
- 1/4 cup (60 ml) vegetable oil
- 2 tablespoon (30 ml) s lemon juice
- 2 teaspoon (10 ml) s vanilla extract
- 1 heaping tablespoon lemon curd
- Cool Whip and Raspberries for serving optional .
Instructions
- Combine the initial four components in a bowl and whisk until smooth.
- Incorporate lemon zest, milk, oil, lemon juice, vanilla, and lemon curd, stirring thoroughly.
- Coat two small cups with cooking spray and pour the batter equally into them.
- Heat the air fryer to 350 degrees for a few minutes, and then place the cups inside the basket.
- Cook in the air fryer for 6 to 10 minutes.
- Optionally, finish with a dollop of Cool Whip and a raspberry on top.
