  • 1/4 cup (60 ml) granulated sugar
  • 1/2 teaspoon (3 ml) baking powder
  • 1/4 teaspoon (1 ml) salt
  • 1/2 teaspoon (3 ml) lemon zest
  • 1/2 cup (120 ml) milk
  • 1/4 cup (60 ml) vegetable oil
  • 2 tablespoon (30 ml) s lemon juice
  • 2 teaspoon (10 ml) s vanilla extract
  • 1 heaping tablespoon lemon curd
  • Cool Whip and Raspberries for serving optional .


Instructions

  1. Combine the initial four components in a bowl and whisk until smooth.
  2. Incorporate lemon zest, milk, oil, lemon juice, vanilla, and lemon curd, stirring thoroughly.
  3. Coat two small cups with cooking spray and pour the batter equally into them.
  4. Heat the air fryer to 350 degrees for a few minutes, and then place the cups inside the basket.
  5. Cook in the air fryer for 6 to 10 minutes.
  6. Optionally, finish with a dollop of Cool Whip and a raspberry on top.
