Ingredients

  • 500g Carrots (17.6 oz)
  • 2 tsp Fine/Table Salt (10 ml)
  • 1 tbsp Ghee (or plant-based butter) (15 ml)
  • 1 tsp Sea Salt Flakes (5 ml)
  • 2 tbsp Agave Syrup (30 ml)


Instructions

  1. Fill a kettle with water and bring it to a boil, or place a small pot filled with water on high heat.
  2. Trim the ends and peel the carrots.
  3. Depending on their size, cut the carrots accordingly. For larger carrots, slice them in half to make them shorter and more manageable, then cut into roughly 1 cm thick rounds.
  4. Cut each round into thick sticks, keeping them substantial since they tend to reduce in size when cooked.
  5. Place the carrot sticks into the pot and cover with the boiling water. Stir in the fine salt and bring back to a boil over high heat. Let them cook for about 15 minutes until they are almost tender.
  6. Drain the carrots thoroughly and let them sit in the warm pot for a minute to allow some steam to evaporate.
  7. If your air fryer can be preheated, do so now.
  8. Combine the ghee and agave syrup with the carrots, and sprinkle with sea salt flakes.
  9. Stir the carrot sticks to evenly coat them with the ghee as it melts and the agave syrup as it heats. If needed, place the pot back on the stove briefly for more warmth.
  10. Gently transfer the carrots to the air fryer basket using tongs to prevent breaking, leaving any excess ghee/agave syrup in the pot. Try to arrange them in a single layer as much as possible. Set the pot aside temporarily.
  11. Cook in the air fryer for 10 minutes at 200°C/390°F.
  12. Move the partially cooked carrots back to the pot (or a different bowl if you prefer more washing up).
  13. Coat the carrots again with the remaining ghee/agave syrup mixture, then return them to the air fryer.
  14. Continue to cook for an additional 10 minutes at 200°C/390°F.
  15. The carrots should be sticky and slightly charred. If you desire a darker appearance, cook them longer until they reach your preferred level of doneness.

Notes

  • To boost the sweetness of the carrots, swap agave syrup with honey for a unique flavor.
  • For a savory touch, mix cumin or paprika with ghee and honey before coating the carrots.
  • For a lighter dish, opt for olive oil or coconut oil instead of ghee.
