Ingredients

  • – 1 tablespoon (15 ml) Cajun or Creole seasoning
  • – 24 (450 g) cleaned and peeled extra jumbo shrimp
  • – 6 ounces (170 g) fully cooked Turkey/Chicken Andouille sausage or beef kielbasa, sliced
  • – 1 medium zucchini, 8 ounces (225 g), sliced into 1/4-inch thick half moons
  • – 1 medium yellow squash, 8 ounces (225 g), sliced into 1/4-inch thick half moons
  • – 1 large red bell pepper, seeded and cut into thin 1-inch pieces
  • – 1/4 teaspoon (1 ml) kosher salt
  • – 2 tablespoons (30 ml) olive oil


Instructions

  1. In a large mixing bowl, mix the shrimp with the Cajun seasoning until they are well coated.
  2. Incorporate the sliced sausage, zucchini, squash, and bell pepper into the bowl, then drizzle with olive oil and sprinkle with salt, stirring to combine.
  3. Set the air fryer to 400°F and allow it to preheat.
  4. For smaller air fryer baskets, divide the shrimp and vegetable mixture into two portions. Place one portion in the air fryer basket and cook for 8 minutes, shaking the basket a couple of times during the cooking process.
  5. After cooking, set the first batch aside and cook the second batch using the same method.
  6. Once both portions have been cooked, place the first batch back in the air fryer and heat for an additional minute.

  • Evenly coat the shrimp with Cajun seasoning for a consistent flavor.
