Ingredients
- – 1 tablespoon (15 ml) Cajun or Creole seasoning
- – 24 (450 g) cleaned and peeled extra jumbo shrimp
- – 6 ounces (170 g) fully cooked Turkey/Chicken Andouille sausage or beef kielbasa, sliced
- – 1 medium zucchini, 8 ounces (225 g), sliced into 1/4-inch thick half moons
- – 1 medium yellow squash, 8 ounces (225 g), sliced into 1/4-inch thick half moons
- – 1 large red bell pepper, seeded and cut into thin 1-inch pieces
- – 1/4 teaspoon (1 ml) kosher salt
- – 2 tablespoons (30 ml) olive oil
Instructions
- In a large mixing bowl, mix the shrimp with the Cajun seasoning until they are well coated.
- Incorporate the sliced sausage, zucchini, squash, and bell pepper into the bowl, then drizzle with olive oil and sprinkle with salt, stirring to combine.
- Set the air fryer to 400°F and allow it to preheat.
- For smaller air fryer baskets, divide the shrimp and vegetable mixture into two portions. Place one portion in the air fryer basket and cook for 8 minutes, shaking the basket a couple of times during the cooking process.
- After cooking, set the first batch aside and cook the second batch using the same method.
- Once both portions have been cooked, place the first batch back in the air fryer and heat for an additional minute.
