Ingredients

  • 2 medium potatoes (300g)
  • 1 tablespoon olive oil (15 ml)
  • kosher salt, pepper
  • 1 1/2 cups shredded cheese of choice (150 g) (I used Mexican blend)
  • 4 strips cooked and crumbled beef bacon
  • Optional: top with sour cream and chives


Instructions

  1. Cut the potatoes into slices that are 1/4 inch thick. Coat each slice with olive oil and sprinkle both sides with kosher salt and pepper.
  2. Arrange the potato slices in the air fryer basket and cook for 10 to 12 minutes. Afterward, add some shredded cheese and crumbled beef bacon to each slice. Reactivate the air fryer for an additional minute at 400 degrees. Note: Depending on the capacity of your air fryer, you might need to cook these in two separate sets.
  3. If you like, add sour cream and chives on top before serving.
