Ingredients
- – 2 lbs. (907 g) Chicken Thighs, skin-on
- – 1.5 tsp (7.5 ml) coarse sea salt
- – 1/2 tsp (2.5 ml) garlic powder
- – 1/2 tsp (2.5 ml) onion powder
- – 1/4 tsp (1.25 ml) white pepper
- – 1/4 cup (60 ml) lemon juice, about 1 to 1 1/2 whole lemons
- – 2 tbsp (30 ml) olive oil
- – 2-3 sprays avocado oil for the air fryer basket
- – 2 tbsp (30 ml) chopped chives
- – Sprinkle Furikake, optional
- – Extra lemon wedges on the side, about quarter to half of one whole lemon
Instructions
- Cut out the bones from the chicken thighs and chop them into pieces that are a bit larger than bite-sized. If you need guidance on how to remove bones from chicken thighs, refer to the blog post with images or the web story. Place the pieces in a container that fits them snugly.
- Combine the seasonings, starting from the sea salt and going through to the olive oil. Mix carefully to ensure every piece is coated evenly with lemon juice. Let the chicken marinate in the refrigerator for a period of time, ranging from overnight up to a full day.
- Apply a light coat of avocado oil to the air fryer basket. Arrange the chicken pieces with the skin facing upwards. Ensure they are spaced out so that they do not overlap, allowing each piece to achieve a crispy texture.
- Set the air fryer to 380°F (193°C) and cook the chicken for 18 to 20 minutes. The skin should become golden and crispy, and the meat should be fully cooked but not dry. For precision, use a digital meat thermometer to check that the internal temperature reaches 165°F (74°C).
- Move the cooked chicken pieces to a medium-sized serving dish. Garnish with chopped chives and sprinkle with furikake if desired. Serve immediately with lemon wedges on the side for added flavor.
Notes
- Consider adding a sprinkle of furikake for extra flavor.
- Arrange chicken in the air fryer without overlapping for crispy skin.
- Marinate the chicken overnight to enhance flavors; serve with extra lemon wedges for a zesty kick.
