Ingredients

  • 1 ½ pounds (680 g) boneless skinless chicken thighs, cut into bite-size pieces
  • 2 tablespoons rice vinegar (30 ml)
  • 1 tablespoon soy sauce (15 ml)
  • 2 teaspoons (10 ml) minced fresh ginger
  • 3/4 teaspoon (4 ml) kosher salt
  • 1/2 teaspoon (3 ml) freshly ground black pepper
  • 2 large eggs, beaten
  • 1 cup (240 ml) cornstarch
  • 3 tablespoons (45 ml) ketchup
  • 3 tablespoons (45 ml) gochujang
  • 3 tablespoons (45 ml) honey
  • 2 tablespoons soy sauce (30 ml)
  • 1 tablespoon sesame oil (15 ml)
  • 2 garlic cloves, minced
  • 4 scallions, thinly sliced
  • Toasted sesame seeds


Instructions

  1. Place parchment paper in the air fryer basket for easy cleanup.
  2. In a medium-sized bowl, mix the chicken pieces with vinegar, soy sauce, ginger, salt, and pepper, ensuring the chicken is well covered. Allow it to soak for 15 to 20 minutes. For a longer soak, cover and chill in the fridge, even up to overnight.
  3. In a shallow dish, whisk the eggs until smooth.
  4. In another shallow dish, place the cornstarch.
  5. Dip each piece of chicken first into the egg, then coat it with cornstarch. Lay the coated chicken pieces on the parchment in the air fryer.
  6. After coating all the chicken, you may need to do this in two rounds, lightly spray or brush the chicken with cooking oil.
  7. Set the air fryer to 400ºF and cook the chicken for 8 minutes. Flip the chicken pieces, apply a bit more oil, and continue cooking for another 7 minutes at 400ºF.
  8. As the chicken cooks, prepare the sauce by combining ketchup, gochujang, honey, soy sauce, sesame oil, and garlic in a small bowl, stirring until smooth.
  9. Once the chicken is done, transfer it to a medium bowl and mix it with the prepared sauce. Sprinkle with sesame seeds and sliced scallions if you like.

Notes

  • Generously coat each chicken piece with cornstarch for a crispier coating in the air fryer.
  • Adjust the amount of gochujang in the sauce for a spicier flavor according to your preference.
  • Marinate the chicken in the vinegar, soy sauce, ginger, salt, and pepper mixture for a more intense flavor, ideally overnight in the fridge.
