Ingredients

  • 12 chicken thighs (about 1.4 kg), boneless and skinless
  • 6 jalapenos, seeded and cut lengthwise
  • 125g room temperature cream cheese
  • 3 cloves garlic, minced
  • 1/2 tsp (3 ml) onion powder
  • 1/2 tsp (3 ml) chili powder
  • 1/4 tsp (1 ml) fresh ground pepper
  • 1 tsp (5 ml) salt
  • 4 tbsp (60 ml) avocado oil (or any other vegetable oil)
  • 1/4 tsp (1 ml) chili powder
  • 1/4 tsp (1 ml) onion powder


Instructions

  1. In a medium-sized mixing bowl, blend together the cream cheese, minced garlic, onion powder, chili powder, salt, and freshly ground pepper. Set this mixture aside.
  2. Trim the stems off the jalapenos, slice them lengthwise, and remove the seeds.
  3. Use a butter knife to spread the cream cheese mixture onto each of the 12 jalapeno halves, similar to spreading butter on toast. Ensure the cream cheese is evenly distributed among all 12 halves.
  4. Flatten each chicken thigh by rolling it out. Place a stuffed jalapeno half onto the chicken, then roll the chicken around it. Secure it in place with a toothpick.
  5. Continue the previous step until all chicken thighs and stuffed jalapenos are used.
  6. In a separate small bowl, prepare the oil mixture by combining the specified ingredients.
  7. Apply the oil mixture to both sides of each rolled chicken piece using a brush.
  8. Set your oven to 400°F to preheat.
  9. Place the chicken rolls on a baking tray and bake them for 20 minutes, making sure to turn them over halfway through the cooking process.
  10. Arrange the chicken rolls in a single layer in the air fryer basket. If they can’t all fit at once, cook them in several batches.
  11. Set the air fryer to 380°F and cook for 12 minutes, flipping the chicken rolls halfway through the cooking time.
  12. Store any leftover chicken in the refrigerator for up to four days.
