Ingredients

  • – 1/4 cup (60 ml) vegetable oil at room temperature
  • – 1/2 cup (100 g) unrefined sugar
  • – 1/3 cup (70 g) packed brown sugar
  • – 1 large egg
  • – 1 1/2 teaspoons (8 ml) baking powder
  • – 1/4 teaspoon (1 ml) baking soda
  • – 2 teaspoons (10 ml) pure vanilla extract
  • – 2/3 cup (60 g) oats
  • – 2 cups (240 g) whole-wheat pastry flour
  • – 1/2 cup (40 g) unsweetened dark cocoa powder
  • – 1/3 cup (80 ml) apple juice
  • – 1 cup (240 g) Greek yogurt
  • – 1/2 cup (120 g) unsweetened applesauce
  • – 1/2 cup (60 g) vegetarian-friendly marshmallows
  • – 1/4 cup (60 ml) water
  • – Extra vegetarian-friendly marshmallows for topping if desired


Instructions

  1. Set your oven to 425°F and lightly coat the donut or muffin pan with oil.
  2. In a big bowl, blend the vegetable oil, unrefined sugar, brown sugar, and egg until the mixture is creamy, which should take about 5 minutes using an electric mixer on medium-high speed.
  3. Incorporate the baking powder, baking soda, vanilla extract, and oats into the creamy mixture, ensuring everything is well mixed and the bowl’s sides are scraped down.
  4. Reduce the mixer speed to low, then gradually add the whole-wheat pastry flour, cocoa powder, and apple juice. Stir until well combined. Follow by adding Greek yogurt and applesauce, mixing just until the ingredients are blended together without overmixing.
  5. Spoon the batter into the greased donut or muffin pan and bake for approximately 12–15 minutes. Alternatively, you can shape the batter into balls and place them on a baking sheet for donut holes.
  6. After baking, allow the donuts to cool slightly in the pan before transferring them to a wire rack to cool for an additional 5 minutes prior to glazing.
  7. As the donuts cool, prepare the marshmallow glaze by melting the marshmallows with water in a small saucepan over low heat, stirring until smooth. Drizzle the glaze over the cooled donuts.
