Ingredients

  • 2 cups (480 ml) milk
  • 4 beef boneless chicken thighs (skin on)
  • 4 beef chicken legs (bone-in, skin on)
  • 1 1/4 cups (150 g) all-purpose flour
  • 1/2 cup (120 ml) vegetable oil
  • 2 1/2 tsp (13 ml) smoked paprika
  • 1 1/2 tsp (8 ml) garlic powder
  • 1 tsp (5 ml) chili powder
  • 1 tsp (5 ml) onion powder
  • 1 tsp (5 ml) oregano (dried)
  • 1 tsp (5 ml) thyme (dried)
  • 1 1/4 tsp (6 ml) white pepper
  • 1 1/2 tsp (8 ml) mustard powder
  • 2 tsp (10 ml) kosher salt
  • 2 tsp (10 ml) nutritional yeast (optional)
  • avocado oil spray
  • flaky salt (for topping)


Instructions

  1. In a big mixing bowl, pour in the milk. Submerge the chicken pieces, cover with plastic wrap, and let them marinate overnight.
  2. When you’re ready to cook, blend the flour with all the spices, salt, and nutritional yeast (if you choose to use it) in a large dish.
  3. Take the chicken out of the fridge and add about 1/4 cup of the milk to the flour mixture, stirring to create a textured coating.
  4. If you’re starting with the chicken legs, handle them first. Preheat the air fryer. Coat the legs thoroughly with the flour mix, shaking off any extra.
  5. Set the air fryer to 370°F. Place the legs in the basket and generously spray with oil. Cook for 22 to 24 minutes, checking midway to add more oil if any spots look dry. No need to turn them over.
  6. Arrange a wire rack on a parchment-lined baking sheet for easy cleanup. Once the legs are done, sprinkle with flaky salt right away, then transfer them to the wire rack and keep warm in the oven on its lowest setting if you’re preparing more.
  7. For the thighs, use the same method as the legs and place them in the air fryer. Cook at 350°F for 15 minutes, checking halfway through to spray any dry areas. No need to turn them over.
  8. After 15 minutes, increase the heat to 360°F and cook for another four to five minutes until they are golden and crispy. Immediately sprinkle with flaky salt.
  9. Serve all the chicken pieces together and enjoy your meal!
