Ingredients

  • 3 boneless, skinless chicken breasts (680g), trimmed of fat, and cut into chunks
  • 2-3 medium zucchini (500g), thickly sliced, then cut into quarters
  • 2-3 medium yellow squash (500g), thickly sliced, then cut into quarters
  • 12 oz (340g) white button mushrooms, washed & quartered
  • salt & pepper to taste
  • 3 tbsp (45ml) minced garlic
  • 1/3 cup (80ml) olive oil + 2 tbsp (30ml)
  • 1/4- 1/3 cup (60-80ml) soy sauce
  • 1 1/2 tbsp (22.5ml) apple cider vinegar
  • 1 tbsp (15ml) sesame oil
  • 1 tsp (5ml) garlic powder


Instructions

  1. Combine all ingredients, except for the additional olive oil, in a large bowl and mix thoroughly until well blended.
  2. Place the chicken and vegetable blend into the air fryer basket, ensuring an even layer. Drizzle the remaining olive oil over the top.
  3. Set the air fryer to 375°F and cook for 15 minutes.
  4. Pair with steamed white rice and yum yum sauce when serving.

Notes

  • Marinate chicken and vegetables in soy sauce mixture for 30 minutes for a more intense flavor.
  • Cut ingredients into similar-sized pieces for even cooking.
