Ingredients
- 3 boneless, skinless chicken breasts (680g), trimmed of fat, and cut into chunks
- 2-3 medium zucchini (500g), thickly sliced, then cut into quarters
- 2-3 medium yellow squash (500g), thickly sliced, then cut into quarters
- 12 oz (340g) white button mushrooms, washed & quartered
- salt & pepper to taste
- 3 tbsp (45ml) minced garlic
- 1/3 cup (80ml) olive oil + 2 tbsp (30ml)
- 1/4- 1/3 cup (60-80ml) soy sauce
- 1 1/2 tbsp (22.5ml) apple cider vinegar
- 1 tbsp (15ml) sesame oil
- 1 tsp (5ml) garlic powder
Instructions
- Combine all ingredients, except for the additional olive oil, in a large bowl and mix thoroughly until well blended.
- Place the chicken and vegetable blend into the air fryer basket, ensuring an even layer. Drizzle the remaining olive oil over the top.
- Set the air fryer to 375°F and cook for 15 minutes.
- Pair with steamed white rice and yum yum sauce when serving.

- Marinate chicken and vegetables in soy sauce mixture for 30 minutes for a more intense flavor.
- Cut ingredients into similar-sized pieces for even cooking.
