Ingredients

  • 454 g red potatoes, cubed (1 lb)
  • 120 ml chopped green bell pepper (1/2 cup)
  • 120 ml chopped onion (1/2 cup)
  • 2 teaspoons (10 ml) vegetable oil
  • 1/2 teaspoon (3 ml) paprika
  • salt and ground black pepper to taste
  • 225 g cubed leftover beef (1 cup)
  • 2 eggs


Instructions

  1. Begin by setting the air fryer to a temperature of 400°F (200°C).
  2. In a sizable bowl, mix together the potatoes, green bell pepper, and onion. Drizzle with vegetable oil, and season with paprika, salt, and pepper. Toss until everything is evenly coated. Place the mixture into the basket of the air fryer.
  3. Let it cook in the heated air fryer for 10 minutes. Give the basket a shake, then continue cooking for an additional 5 minutes. Mix in the beef cubes and allow it to cook for another 5 minutes.
  4. Create two small indentations in the mixture. Break an egg into each indentation. Cook until the eggs are firm and done to your liking, which should take about 3 minutes.
