Ingredients
- 1 large flatbread (I bought a huge garlic and herb flatbread from Tesco) or two medium-sized flatbreads
- 1 tomato, cut into 6 wedges
- 1/2 red onion, sliced
- Small bunch of parsley, roughly chopped
- 2 chicken thighs (skinless and boneless), sliced into chunks
- 1 teaspoon (5 ml) garlic, minced
- 1/2 tablespoon (8 ml) mixed herbs
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) black pepper
- 1/2 lemon, juiced
- 1 tablespoon (15 ml) olive oil
- 2 large potatoes, sliced into 1 cm thick wedges
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon (5 ml) salt
- 1 tsp (5 ml) black pepper
- 2 tablespoon (30 ml) greek yogurt
- 1/2 cucumber, grated and squeezed to remove any water
- 2 tsp (10 ml) garlic, minced
- 1/2 lemon, juiced
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) black pepper
Instructions
- Start by combining your chicken pieces with the marinade ingredients and let them sit for 20 minutes.
- In the meantime, cut the potatoes into wedges about 1cm thick and coat them with olive oil, salt, and pepper.
- Place the potato wedges in one section of your Ninja Foodi Air Fryer.
- Thread the marinated chicken onto two skewers and position them in the other section of the Ninja Foodi Air Fryer.
- Set the air fryer to 200°C/390°F for 16 minutes and use the MATCH setting so both the chicken and potatoes complete cooking simultaneously. Don’t forget to flip them halfway through. This will give you crispy chicken and perfectly cooked fries.
- Carefully remove the chicken from the skewers, cutting it into small pieces for assembling the gyros.
- While the chicken cooks, mix together all the ingredients for the tzatziki sauce in a bowl, ensuring you’ve squeezed out any extra water from the cucumber. Adjust the seasoning to your liking.
- Prepare the red onion, tomato, and parsley by chopping them up.
- Warm or lightly toast the flatbread, then spread on tzatziki, add chicken, fries, tomatoes, red onion, parsley, and more tzatziki. Roll the gyros up (using baking paper can help keep it together) and serve immediately. Enjoy!
