Ingredients

  • 640g / 1.4 lb boneless skinless Chicken Thighs
  • 1 tbsp (15 ml) Olive Oil
  • 1 tsp (5 ml) Paprika
  • 3/4 tsp (4 ml) EACH: Garlic Powder, Salt
  • 1/2 tsp (3 ml) Black Pepper
  • 1/4 tsp (1 ml) EACH: Onion Powder, Cayenne Pepper
  • 75g / 5 tbsp Unsalted Butter, softened
  • 20g / 1/4 cup freshly grated Parmesan
  • 3 cloves of Garlic, finely grated/minced
  • 1 tbsp (15 ml) very finely diced Fresh Parsley
  • 1/4 tsp (1 ml) EACH Salt, Black Pepper, or to taste


Instructions

  1. Cut the chicken thighs into small chunks, then mix them in a bowl with the olive oil and spices.
  2. Skewer the chicken pieces onto 4 sticks, leaving some space at both ends. Ensure the pieces are snugly packed to maintain their juiciness.
  3. Arrange the skewers in the air fryer and cook at 200°C/400°F for 10 minutes.
  4. While the chicken cooks, blend the butter with parmesan, garlic, and parsley, along with salt and pepper. The butter should be soft enough to spread without being fully melted, aiming for a creamy texture. Use the microwave in 5-second intervals if needed to achieve this.
  5. After 10 minutes, turn the skewers over using tongs and coat them with one-third of the butter mixture. Continue air frying for 2 minutes and 30 seconds, then turn the skewers again and apply another one-third of the butter. Air fry for an additional 2 minutes and 30 seconds, or until the chicken is lightly charred on the outside and thoroughly cooked inside (ensure the chicken reaches an internal temperature of 165°F/74°C for safety).
  6. Take the skewers out and apply the remaining butter mixture. Optionally, sprinkle more parmesan and parsley over the hot skewers if desired.

Notes

  • Leave small gaps between chicken pieces on the skewer for even cooking
  • Soften butter at room temperature or with brief microwave bursts for easy mixing
