Description

Ingredients

  • – 1 1/2 lbs (680 g) boneless skinless chicken thighs, cut into 2 inch (5 cm) pieces
  • – 1 1/2 Tbsp (22.5 ml) garlic and herb seasoning
  • – 1 Tbsp (15 ml) olive oil
  • – 6 skewers, metal or bamboo
  • – 1/2 cup (120 ml) vegetable oil, softened to room temperature
  • – 4 cloves garlic, minced or grated
  • – 1 Tbsp (15 ml) garlic and herb seasoning
  • – 1/2 tsp (2.5 ml) salt
  • – 1/3 cup (80 ml) chopped fresh parsley
  • – 1/4 cup (60 ml) grated Parmesan cheese


Instructions

  1. If you are using bamboo skewers, immerse them in water for at least half an hour. If you have metal skewers, ensure they fit your air fryer basket, and there’s no need to soak them.
  2. In a large bowl, place the chicken pieces. Pour olive oil over them and mix thoroughly.
  3. Sprinkle the garlic and herb seasoning over the chicken, ensuring an even coating. You can use your hands or a spatula to massage the seasoning into the chicken.
  4. Place about 7-8 pieces of chicken onto each skewer and set them aside on a plate.
  5. Set your air fryer to 400°F and let it preheat for a few minutes. Arrange the skewers in the air fryer basket in a single layer, ensuring there’s some space between them (you might need to cook in multiple batches).
  6. Cook the chicken in the air fryer for 8 minutes.
  7. While the chicken cooks, mix all the ingredients for the garlic parmesan mixture in a small bowl.
  8. After 8 minutes, flip the skewers using tongs.
  9. Generously coat the chicken with the garlic butter and continue cooking for another 7 minutes or until the chicken’s internal temperature reaches 165°F.
  10. Once done, turn the chicken over and apply the garlic butter to the other side.
  11. Serve hot, with extra garlic butter available if more flavor is desired.
