Ingredients
- 1 large globe eggplant, sliced into 1/4-inch-thick rounds (6 mm)
- Sea salt, for sprinkling
- 1 large egg*
- 1/2 cup breadcrumbs (60 g)
- 1/2 cup almond flour (60 g)
- 1/4 cup Vegan Parmesan (25 g)
- 1/2 teaspoon (3 ml) sea salt
- Freshly ground black pepper
- Vegetable oil, for drizzling
- Cooked pasta
- Tomato Sauce
- Cashew Cream
- Fresh basil leaves and/or chopped fresh parsley
- Red pepper flakes
Instructions
- Heat the air fryer to 370°F.
- Scatter salt on both sides of the eggplant rounds and let them sit in a large colander for half an hour to drain.
- Beat the egg in a shallow dish. In another bowl or on a plate with edges, mix the breadcrumbs, almond flour, Vegan Parmesan, salt, and pepper.
- Dry the eggplant slices with a towel, coat them in the beaten egg, and then cover them with the breadcrumb mixture. Arrange them on a plate as you go and drizzle with vegetable oil. Lay them in a single layer in the air fryer basket, cooking for 17 to 20 minutes until they are crispy and golden, turning them over halfway. Repeat in separate batches if needed.
- To make a complete meal, serve the cooked eggplant with pasta, add spoonfuls of tomato sauce and cashew cream, garnish with basil or parsley, sprinkle with red pepper flakes, and finish with a drizzle of vegetable oil.
