Ingredients

  • 8 large eggs, divided
  • 2 tbsp (30 ml). mayonnaise
  • 2 1/2 tsp (13 ml). sweet pickle relish
  • 1 1/2 tsp (8 ml). Dijon mustard, divided
  • 1 1/2 tsp (8 ml). yellow mustard, divided
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 c. (60 g.) all-purpose flour
  • 1/2 c. finely ground Ritz cracker crumbs (from 15 to 20 crackers)
  • 1/2 c. panko bread crumbs
  • 1/4 tsp (1 ml). garlic powder
  • 1/2 tsp (3 ml). dried parsley flakes
  • Pinch of cayenne pepper (optional )
  • Olive oil or other neutral cooking spray
  • Ground paprika, for dusting
  • Fresh dill, for serving


Instructions

  1. Place six eggs into the basket of the air fryer. Set it to 250°F and cook for 17 minutes. Once done, carefully move the eggs to a bowl of ice water. Allow them to sit until they are cool enough to touch, then remove the shells.
  2. Cut the eggs lengthwise into halves. Remove the yolks and place them in a medium-sized bowl, keeping the whites separate. To the yolks, incorporate mayonnaise, relish, 1 teaspoon of Dijon mustard, and 1 teaspoon of yellow mustard. Use a fork to mash and mix until the texture is smooth and creamy; season with salt and black pepper. Place this mixture into a small piping bag or a zip-top bag with a corner snipped off. Chill until needed.
  3. Put flour in a shallow dish. In another shallow dish, lightly whisk the remaining two eggs, 1/2 teaspoon of Dijon mustard, and 1/2 teaspoon of yellow mustard, adding a pinch of salt and black pepper. In a third shallow dish, blend together cracker crumbs, panko, garlic powder, parsley, cayenne (if desired), 3/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
  4. Take each egg white shell individually and coat it in flour, then dip into the egg mixture, allowing any extra to fall off. Coat generously with the panko mixture, pressing gently to make it stick. Place on a baking sheet. Lightly spray both sides of each egg with cooking spray.
  5. Without overcrowding, place the eggs in the air fryer basket, working in batches if necessary. Cook at 390°F, turning them halfway through, until they are a rich golden color and crunchy, about 8 to 10 minutes. Allow to cool slightly.
  6. Arrange the egg whites on a serving dish. Fill them with the yolk mixture. Sprinkle with paprika and garnish with dill.
