Ingredients
- 1 large egg (50 g), beaten
- 1/4 cup (30 g) all-purpose flour
- 3/4 cup (90 g) breadcrumbs
- 1/3 cup (30 g) freshly grated non-dairy cheese
- 2 tsp. (4 g) lemon zest
- 1 tsp (5 ml). dried oregano
- 1/4 tsp (1 ml). cayenne pepper
- Salt
- Freshly ground black pepper
- 2 boneless skinless chicken breasts, about 8 oz (225 g) each
Instructions
- Put the beaten egg and flour into two separate shallow dishes. In a third shallow dish, mix together the breadcrumbs, grated non-dairy cheese, lemon zest, oregano, cayenne pepper, and a couple of turns of freshly ground black pepper. Sprinkle the chicken breasts with 1 teaspoon of salt to season them evenly.
- Individually, coat the chicken by first dredging it in the flour, then dipping it into the beaten egg, and finally pressing it into the breadcrumb mixture to ensure it adheres well.
- Arrange the coated chicken pieces in the air fryer basket and set the temperature to 375°F. Cook them for 10 minutes. Turn the chicken over and continue cooking for another 5 minutes, or until the coating is a golden brown and the chicken is thoroughly cooked.

- For a more flavorful crust, consider adding a touch of garlic powder or smoked paprika to the breadcrumb mixture.
