Ingredients

  • 1 large egg (50 g), beaten
  • 1/4 cup (30 g) all-purpose flour
  • 3/4 cup (90 g) breadcrumbs
  • 1/3 cup (30 g) freshly grated non-dairy cheese
  • 2 tsp. (4 g) lemon zest
  • 1 tsp (5 ml). dried oregano
  • 1/4 tsp (1 ml). cayenne pepper
  • Salt
  • Freshly ground black pepper
  • 2 boneless skinless chicken breasts, about 8 oz (225 g) each


Instructions

  1. Put the beaten egg and flour into two separate shallow dishes. In a third shallow dish, mix together the breadcrumbs, grated non-dairy cheese, lemon zest, oregano, cayenne pepper, and a couple of turns of freshly ground black pepper. Sprinkle the chicken breasts with 1 teaspoon of salt to season them evenly.
  2. Individually, coat the chicken by first dredging it in the flour, then dipping it into the beaten egg, and finally pressing it into the breadcrumb mixture to ensure it adheres well.
  3. Arrange the coated chicken pieces in the air fryer basket and set the temperature to 375°F. Cook them for 10 minutes. Turn the chicken over and continue cooking for another 5 minutes, or until the coating is a golden brown and the chicken is thoroughly cooked.

Notes

  • For a more flavorful crust, consider adding a touch of garlic powder or smoked paprika to the breadcrumb mixture.
  • Make sure to evenly season the chicken breasts with salt before coating to enhance the overall taste.
