Ingredients

  • – 1 pound (454 g) beef, cut into bite-size pieces
  • – 8 ounces (227 g) mushrooms, washed and cut in half
  • – 1 red bell pepper, seeded and cut into bite-size pieces
  • – 1 tablespoon (15 ml) vegetable oil
  • – salt and pepper to taste
  • – 2 tablespoons (30 ml) vegetable oil
  • – 2 teaspoons (10 ml) minced garlic
  • – 2 teaspoons (10 ml) soy sauce or coconut aminos
  • – 1 teaspoon (5 ml) minced fresh rosemary
  • – 1/4 teaspoon (1 ml) crushed red pepper


Instructions

  1. In a bowl, combine the beef, mushrooms, and red pepper with the vegetable oil, along with salt and pepper to your liking.
  2. Set the air fryer to 390 degrees F and allow it to heat for 3 minutes.
  3. Place the beef and vegetables into the air fryer and cook for 10 minutes. After this time, mix the ingredients to ensure they cook uniformly, then continue cooking for an extra 3-5 minutes until the vegetables soften and the beef reaches an internal temperature of 165 degrees F.
  4. Meanwhile, on medium-low heat, warm a skillet and add the remaining vegetable oil until it melts. Sauté the minced garlic for 30 seconds, then incorporate the soy sauce, rosemary, and crushed red pepper. Mix thoroughly. Remove the skillet from heat.
  5. Once the beef and vegetables are ready, transfer them to the skillet and stir them in the garlic and herb sauce.
  6. Serve at once, adding extra rosemary, red pepper, and parmesan cheese if you wish.
