Ingredients
- 1 pound (454 g) shrimp, raw, large, peeled and deveined with tails attached
- 1/4 cup (60 ml) all-purpose flour
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) salt plus more to taste
- 1/4 teaspoon (1 ml) black pepper
- 2 large eggs
- 3/4 cup (180 ml) shredded sweetened coconut or unsweetened
- 1/4 cup (60 ml) panko breadcrumbs
- Cooking spray
- Sweet chili sauce for serving
Instructions
- Set the air fryer to a temperature of 360°F, and once it’s preheated, mist the basket with cooking spray.
- In the first shallow dish, blend the flour, garlic powder, salt, and pepper. Beat the eggs in a second shallow dish. In a third shallow dish, mix together the shredded coconut and panko breadcrumbs.
- Coat each shrimp in the flour mixture, ensuring any extra is removed. Submerge the shrimp in the beaten eggs, then cover them in the coconut and panko mix, pressing lightly to make sure it sticks.
- Arrange the coconut-coated shrimp in the air fryer basket without them overlapping, and lightly spray the tops. Cook for 6 minutes, then turn the shrimp over, spray again, and continue cooking for another 4-6 minutes.
- Add a touch of salt immediately after cooking, optionally garnish with chopped parsley, and serve alongside sweet chili sauce if you like.
