Ingredients
- – 640g boneless skinless Chicken Thighs (1.4 lb)
- – 1 tbsp (15 ml) Olive Oil
- – 1 tsp (5 ml) Paprika
- – 3/4 tsp (4 ml) EACH: Garlic Powder, Salt
- – 1/2 tsp (3 ml) Black Pepper
- – 1/4 tsp (1 ml) EACH: Onion Powder, Cayenne Pepper (reduce if you really don’t like spice – it’s very subtle though)
- – 5 tbsp (75g) Beef Tallow, softened
- – 1/4 cup (20g) Vegan Parmesan
- – 3 cloves of Garlic, finely grated/minced (see notes)
- – 1 tbsp (15 ml) very finely diced Fresh Parsley
- – 1/4 tsp (1 ml) EACH Salt, Black Pepper, or to taste
Instructions
- Cut the chicken thighs into small, bite-sized chunks and mix them in a bowl with the olive oil and spices.
- Thread the chicken pieces onto four skewers, leaving space at both ends, and pack them tightly to retain moisture.
- Set the air fryer to 200C/400F and cook the skewers for 10 minutes.
- In the meantime, blend the beef tallow with vegan parmesan, garlic, parsley, salt, and pepper until it becomes soft enough to spread, but not fully liquefied. Use the microwave in 5-second intervals to achieve a creamy texture, if needed.
- After 10 minutes, turn the skewers using tongs and coat them with one-third of the tallow mixture. Cook in the air fryer for 2 minutes and 30 seconds, turn them again, and apply another third of the tallow mixture.
- Continue to air fry for an additional 2 minutes and 30 seconds, or until the chicken is slightly charred and thoroughly cooked (the safe internal temperature is 165F/74C).
- Take the skewers out and brush them with the remaining tallow mixture. If you like, sprinkle extra vegan parmesan and parsley on top while they’re still hot.
Notes
- Consider adding extra finely grated garlic for a bolder flavor in the tallow mixture.
- Adjust cayenne pepper to suit your spice tolerance, enhancing the flavor depth.
- Ensure the chicken skewers are evenly coated with the tallow mixture for a rich finish.
