Ingredients
- 2 (8-oz.) boneless, skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 1/3 c. all-purpose flour
- 2 large eggs
- 1 c. panko bread crumbs
- 1/4 c. finely grated Parmesan
- 1 tsp (5 ml). dried oregano
- 1/2 tsp (3 ml). crushed red pepper flakes
- 1/2 tsp (3 ml). garlic powder
- 1 c. store-bought or homemade marinara
- 1 c. shredded mozzarella
- Chopped fresh parsley, for serving
Instructions
- Carefully slice the chicken breasts horizontally to create four thin pieces, then sprinkle both sides with salt and pepper.
- Place the flour in a shallow dish and add a generous pinch of salt and some pepper; mix well. In another dish, beat the eggs. In a third dish, mix together the panko, Parmesan, oregano, red pepper flakes, and garlic powder.
- One at a time, coat each chicken piece in the flour, shaking off the extra. Dip it in the beaten eggs, letting the excess drip off, then press into the panko mixture, ensuring both sides are thoroughly covered.
- If needed, work in batches; place the chicken in a single layer in the air fryer basket. Cook at 400°F, flipping once, until just cooked through, about 5 minutes on each side. Add marinara sauce and mozzarella on top of the chicken. Continue cooking at 400°F until the cheese is melted and turns golden, roughly 3 more minutes.
- Distribute the chicken onto plates and garnish with chopped parsley.
