Ingredients

  • 2 (225g) boneless, skinless chicken breasts
  • Salt
  • Pepper
  • 80g all-purpose flour
  • 2 large eggs
  • 240ml breadcrumbs
  • 60g finely grated Parmesan cheese
  • 1 tsp (5 ml). dried oregano
  • 1/2 tsp (3 ml). crushed red pepper flakes
  • 1/2 tsp (3 ml). garlic powder
  • 240ml tomato sauce
  • 120g shredded mozzarella cheese
  • Chopped fresh parsley, for serving


Instructions

  1. Slice the chicken breasts in half horizontally to make four thin fillets; sprinkle both sides with salt and pepper.
  2. Put the flour in a shallow dish and season with a hefty pinch of salt and several turns of black pepper. In another shallow dish, whisk the eggs until smooth. In a third shallow dish, mix the breadcrumbs, Parmesan, oregano, red pepper flakes, and garlic powder together.
  3. Individually, coat each chicken piece in the flour, shaking off any excess. Submerge in the beaten eggs, allowing any extra to fall away, then press into the breadcrumb mixture to ensure an even coating on both sides.
  4. If needed, arrange the chicken in a single layer in the air-fryer basket, working in batches. Cook at 400°F, flipping once, until the chicken is just cooked through, approximately 5 minutes on each side. Layer the chicken with tomato sauce and mozzarella. Continue cooking at 400°F until the cheese is melted and lightly browned, around 3 more minutes.
  5. Serve the chicken on plates and sprinkle with fresh parsley.

Notes

  • Add some extra flavor by mixing garlic powder or dried oregano into the breadcrumb coating for the chicken.
  • Season each layer of the dish with salt and pepper to enhance the overall taste.
  • To achieve a crispy texture, firmly press the breadcrumb mixture onto the chicken before air-frying.
