Description

Ingredients

  • 2 chicken breasts (450g)
  • 1/2 tsp (3 ml) sea salt
  • 2 tsp (10 ml) vegetable oil
  • 1 tsp (5 ml) paprika
  • 1/2 tsp (3 ml) garlic powder
  • 1/2 tsp (3 ml) onion powder
  • 1/4 tsp (1 ml) ground black pepper


Instructions

  1. Position the chicken breasts on a chopping board and place a large piece of plastic wrap on top. Use a rolling pin, meat mallet, or your hand to gently flatten them to an even thickness.
  2. To dry brine, set the chicken on a dish and evenly sprinkle with sea salt. Leave uncovered in the fridge for at least 30 minutes or up to a day—skip this step if not dry brining.
  3. When prepared to cook in the air fryer, take the chicken out of the fridge and allow it to sit at room temperature for 15 minutes.
  4. Combine the paprika, garlic powder, onion powder, and ground black pepper in a small bowl (include the salt now if the chicken wasn’t dry brined).
  5. Put the chicken in a sizable bowl, drizzle with vegetable oil, and sprinkle the spice blend on top. Mix well to ensure the spices are evenly rubbed on both sides of the chicken.
  6. Set the air fryer to preheat at 375 degrees F (my model heats up in 3 minutes). Place the chicken with the smoother side facing down in the air fryer and cook for 6 minutes.
  7. Carefully remove the basket and use tongs to flip the chicken over. Cook further until the internal temperature of the chicken reaches between 155 and 160 degrees F, which may take an additional 2 to 8 minutes. While chicken is safe to eat at 165 degrees F, I prefer removing it slightly earlier to let carryover cooking finish it. Total cooking time depends on your air fryer model and chicken size. Smaller pieces (around 6 ounces each) typically need about 8 minutes total; larger ones might require 14 minutes or more. Keep an eye on the chicken towards the end to avoid overcooking.
  8. Transfer the chicken to a plate, cover it, and let it rest for 5 to 10 minutes before slicing and serving. Enjoy!
