Ingredients

  • 1 pound chicken breast, chopped into bite-size pieces (450g)
  • 1 cup broccoli florets (240ml)
  • 1 zucchini, chopped (200g)
  • 1 cup bell pepper, chopped (240ml) – any colors you like
  • 1/2 onion, chopped (60g)
  • 2 cloves garlic, minced or crushed
  • 2 tablespoons (30 ml) olive oil
  • 1/2 teaspoon (3 ml) EACH garlic powder, chili powder, salt, pepper
  • 1 tablespoon (15 ml) Italian seasoning (or spice blend of choice)


Instructions

  1. Set the air fryer to 400°F to begin heating.
  2. Cut the vegetables and chicken into small, bite-sized pieces and place them into a large bowl.
  3. Pour the olive oil and sprinkle the spices over the contents of the bowl, then stir everything together to ensure even coating.
  4. Transfer the seasoned chicken and vegetables into the heated air fryer and cook for 10 minutes, making sure to shake the basket halfway through, until the meat is fully cooked and the vegetables are nicely browned. If your air fryer has limited space, you might need to cook in 2-3 separate rounds.
