Ingredients
- – 1 pound (454 g) boneless skinless chicken breast, cut into 1-inch pieces
- – 1 medium head of broccoli, cut into florets
- – 1 tablespoon (15 ml) olive oil
- – Salt and pepper, to taste
- – 2 tablespoons (30 ml) olive oil
- – 2 tablespoons (30 ml) apple cider vinegar
- – 1 tablespoon (15 ml) maple syrup
- – 2 teaspoons (10 ml) Italian seasoning
- – 1 teaspoon (5 ml) onion powder
- – 1 teaspoon (5 ml) garlic powder
- – 1 teaspoon (5 ml) smoked paprika
- – Salt and pepper, to taste
- – cooked rice, and parsley
Instructions
- Mix together the marinade components in a bowl: 2 tablespoons of olive oil, 2 tablespoons of apple cider vinegar, 1 tablespoon of maple syrup, 2 teaspoons of Italian seasoning, 1 teaspoon each of onion powder, garlic powder, and smoked paprika, along with salt and pepper to taste.
- Chop the chicken breast into 1-inch cubes and place them in the marinade, ensuring each piece is well-coated. Let it sit for 15 minutes at room temperature or up to an hour in the refrigerator.
- In the meantime, separate the broccoli into florets, coat them with 1 tablespoon of olive oil, and season with salt and pepper.
- Set the air fryer to 380°F. Place the marinated chicken pieces in a single layer in the air fryer basket and cook for 10-12 minutes, until nearly done and no longer pink inside.
- Give the basket a good shake and add the broccoli florets. Continue air frying for 6-8 minutes, or until the chicken is fully cooked.
- Present the dish with cooked rice and sprinkle with chopped parsley if you wish.
Notes
- Marinate the chicken longer for added flavor, ideally overnight in the refrigerator.
- Cook chicken in a single layer in the air fryer for even results, avoiding overcrowding.
- Adjust seasoning to taste, adding more or less salt, pepper, or spices as desired. Serve over quinoa or couscous for a nutritious meal.
