Ingredients

  • – 1 pound (454 g) boneless skinless chicken breast, cut into 1-inch pieces
  • – 1 medium head of broccoli, cut into florets
  • – 1 tablespoon (15 ml) olive oil
  • – Salt and pepper, to taste
  • – 2 tablespoons (30 ml) olive oil
  • – 2 tablespoons (30 ml) apple cider vinegar
  • – 1 tablespoon (15 ml) maple syrup
  • – 2 teaspoons (10 ml) Italian seasoning
  • – 1 teaspoon (5 ml) onion powder
  • – 1 teaspoon (5 ml) garlic powder
  • – 1 teaspoon (5 ml) smoked paprika
  • – Salt and pepper, to taste
  • – cooked rice, and parsley


Instructions

  1. Mix together the marinade components in a bowl: 2 tablespoons of olive oil, 2 tablespoons of apple cider vinegar, 1 tablespoon of maple syrup, 2 teaspoons of Italian seasoning, 1 teaspoon each of onion powder, garlic powder, and smoked paprika, along with salt and pepper to taste.
  2. Chop the chicken breast into 1-inch cubes and place them in the marinade, ensuring each piece is well-coated. Let it sit for 15 minutes at room temperature or up to an hour in the refrigerator.
  3. In the meantime, separate the broccoli into florets, coat them with 1 tablespoon of olive oil, and season with salt and pepper.
  4. Set the air fryer to 380°F. Place the marinated chicken pieces in a single layer in the air fryer basket and cook for 10-12 minutes, until nearly done and no longer pink inside.
  5. Give the basket a good shake and add the broccoli florets. Continue air frying for 6-8 minutes, or until the chicken is fully cooked.
  6. Present the dish with cooked rice and sprinkle with chopped parsley if you wish.

Notes

  • Marinate the chicken longer for added flavor, ideally overnight in the refrigerator.
  • Cook chicken in a single layer in the air fryer for even results, avoiding overcrowding.
  • Adjust seasoning to taste, adding more or less salt, pepper, or spices as desired. Serve over quinoa or couscous for a nutritious meal.
