Ingredients
- – 1 pound (454 g) boneless skinless chicken breast, cut into 1-inch pieces
- – 1 medium head of broccoli, cut into florets
- – 1 tablespoon (15 ml) vegetable oil
- – Salt and pepper, to taste
- – 2 tablespoons (30 ml) vegetable oil
- – 2 tablespoons (30 ml) balsamic vinegar
- – 1 tablespoon (15 ml) maple syrup
- – 2 teaspoons (10 ml) Italian seasoning
- – 1 teaspoon (5 ml) onion powder
- – 1 teaspoon (5 ml) garlic powder
- – 1 teaspoon (5 ml) smoked paprika
- – Salt and pepper, to taste
- – Cooked rice, and parsley
Instructions
- Mix together the marinade components in a bowl, including the specified amounts of vegetable oil, balsamic vinegar, maple syrup, Italian seasoning, onion powder, garlic powder, smoked paprika, along with salt and pepper to your preference.
- Chop the chicken breast into 1-inch cubes and place them into the prepared marinade, ensuring each piece is well-coated. Let it rest for 15 minutes at room temperature or up to an hour if refrigerated.
- While the chicken marinates, separate the broccoli into florets and toss them with vegetable oil, salt, and pepper.
- Set the air fryer to 380°F. Lay the marinated chicken pieces in a single layer in the air fryer basket and cook for 10-12 minutes, until they are nearly cooked and no longer pink.
- Shake the basket, incorporating the broccoli, and continue air frying for another 6-8 minutes, or until the chicken is fully cooked.
- Pair with cooked rice and sprinkle with parsley, if desired, before serving.
Notes
- Marinate the chicken longer for enhanced flavor, refrigerating overnight if possible.
- Ensure even cooking by avoiding overcrowding the air fryer basket; cook in batches if needed.
- Enhance the dish by adding colorful and nutritious vegetables like bell peppers or carrots.
