Ingredients

  • – 1 pound (454 g) boneless skinless chicken breast, cut into 1-inch pieces
  • – 1 medium head of broccoli, cut into florets
  • – 1 tablespoon (15 ml) vegetable oil
  • – Salt and pepper, to taste
  • – 2 tablespoons (30 ml) vegetable oil
  • – 2 tablespoons (30 ml) balsamic vinegar
  • – 1 tablespoon (15 ml) maple syrup
  • – 2 teaspoons (10 ml) Italian seasoning
  • – 1 teaspoon (5 ml) onion powder
  • – 1 teaspoon (5 ml) garlic powder
  • – 1 teaspoon (5 ml) smoked paprika
  • – Salt and pepper, to taste
  • – Cooked rice and parsley


Instructions

  1. Mix together the ingredients for the marinade in a bowl.
  2. Chop the chicken breast into 1-inch chunks and stir them into the marinade, making sure each piece is well-coated. Let the chicken sit for 15 minutes at room temperature or up to an hour in the refrigerator.
  3. At the same time, cut the broccoli into florets, drizzle with vegetable oil, and season with salt and pepper.
  4. Set the air fryer to 380°F and place the chicken in a single layer in the basket, cooking for about 10-12 minutes until nearly cooked.
  5. Toss the basket and add the broccoli. Continue cooking for an additional 6-8 minutes until the chicken is thoroughly done.
  6. Serve alongside prepared rice and sprinkle with parsley, if you like.
