Ingredients
- – 1 pound (454 g) boneless skinless chicken breast, cut into 1-inch pieces
- – 1 medium head of broccoli, cut into florets
- – 1 tablespoon (15 ml) vegetable oil
- – Salt and pepper, to taste
- – 2 tablespoons (30 ml) vegetable oil
- – 2 tablespoons (30 ml) balsamic vinegar
- – 1 tablespoon (15 ml) maple syrup
- – 2 teaspoons (10 ml) Italian seasoning
- – 1 teaspoon (5 ml) onion powder
- – 1 teaspoon (5 ml) garlic powder
- – 1 teaspoon (5 ml) smoked paprika
- – Salt and pepper, to taste
- – Cooked rice and parsley
Instructions
- Mix together the ingredients for the marinade in a bowl.
- Chop the chicken breast into 1-inch chunks and stir them into the marinade, making sure each piece is well-coated. Let the chicken sit for 15 minutes at room temperature or up to an hour in the refrigerator.
- At the same time, cut the broccoli into florets, drizzle with vegetable oil, and season with salt and pepper.
- Set the air fryer to 380°F and place the chicken in a single layer in the basket, cooking for about 10-12 minutes until nearly cooked.
- Toss the basket and add the broccoli. Continue cooking for an additional 6-8 minutes until the chicken is thoroughly done.
- Serve alongside prepared rice and sprinkle with parsley, if you like.
Notes
- Marinate the chicken for at least 30 minutes to enhance the flavor.
- Avoid overcrowding the air fryer for even cooking; cook in batches if necessary.
- Adjust seasonings to taste and feel free to add more salt, pepper, or spices.
