Ingredients

- 1 zucchini (chopped)
- 1 cup (240 ml) bell pepper (chopped (any colors you like))
- 1/2 onion (chopped)
- 2 cloves garlic (minced or crushed)
- 2 tablespoon (30 ml) s olive oil
- 1/2 teaspoon (3 ml) EACH garlic powder, chili powder, salt, pepper
- 1 tablespoon (15 ml) Italian seasoning ((or spice blend of choice))
Instructions
- Set your air fryer to a temperature of 400°F.
- Cut the chicken and vegetables into bite-sized chunks, then place them in a large mixing bowl.
- Pour the olive oil and sprinkle the spices over the mixture, stirring well to ensure everything is coated.
- Transfer the seasoned chicken and vegetables into the preheated air fryer, cooking for 10 minutes. Make sure to shake the basket halfway through the cooking time, until the chicken is fully cooked and the vegetables are nicely browned.
