Ingredients

  • 1 lb (450 g) 2-3 medium chicken breasts cut into 1-inch pieces
  • 1 teaspoon (5 ml) oil (peanut, vegetable, or canola)
  • 7 oz (200 g) broccoli florets about 2 cups, cut into small bite-size pieces
  • 1 cup (240 ml) mushrooms sliced 3 mm/ 1/8″ thick
  • 2 cloves garlic minced
  • 2 teaspoon (10 ml) s fresh ginger grated or minced
  • 1 teaspoon (5 ml) honey
  • 2 teaspoon (10 ml) s sesame oil
  • 1 tablespoon (15 ml) soy sauce all-purpose or light
  • 1 teaspoon (5 ml) sriracha or hot sauce
  • Rice
  • Creamy sriracha mayo


Instructions

  1. Set the Air Fryer to a temperature of 400°F (205°C) and allow it to heat up.
  2. In a large mixing bowl, combine the chicken pieces with broccoli, mushrooms, and the seasonings, ensuring everything is evenly coated.
  3. Place the chicken and vegetable mixture into the Air Fryer that has been preheated, and cook for 10 minutes, making sure to turn the pieces over halfway through. The chicken will be done when it has a slight char on the outside.

Notes

  • Marinate the chicken in a mixture of soy sauce, sesame oil, garlic, and ginger for at least 30 minutes before cooking for enhanced flavor.
  • Cut the chicken and vegetables into uniform sizes to ensure even cooking in the Air Fryer.
