Ingredients

  • – 500 grams (1.1 lbs (499 g)) Potatoes, boiled
  • – 3 tbsp (45 ml) Rice flour
  • – 2 tsp (10 ml) Garlic powder
  • – 2 tsp (10 ml) Chilli flakes
  • – 1 tsp (5 ml) Salt
  • – 1 tsp (5 ml) Black pepper
  • – 1 tsp (5 ml) Mixed Italian herbs, dried
  • – 225 grams (0.5 lbs (227 g)) Beef or vegetable-based cheese, shredded
  • – 4 tbsp (60 ml) Corn flour
  • – 1/4 cup (60 ml) Water
  • – 1 cup (240 ml) Panko breadcrumbs
  • – Vegetable oil for brushing


Instructions

  1. Peel the skins off the boiled potatoes and mash them until they are lump-free.
  2. Incorporate rice flour, garlic powder, chili flakes, salt, black pepper, and dried Italian herbs. Blend thoroughly and shape into large, smooth spheres. (Ensure the texture is not overly soft or overly firm).
  3. Portion the mixture into 19-20 small, evenly-sized spheres. Flatten one sphere, place 2 teaspoons of shredded cheese at its core, and close it back into a ball.
  4. Prepare a bowl with a mixture of corn flour and water to create a paste, and place panko breadcrumbs in a separate bowl.
  5. Submerge the balls into the paste, then coat them with the breadcrumbs.
  6. Set the air fryer to preheat for 5 minutes at 350ºF/180ºC. Lightly coat the basket with oil and arrange the filled balls inside. Apply a bit of oil on top. Cook for 7 minutes on one side, then flip and continue for another 5-6 minutes until they turn golden brown. Repeat with the remaining balls.
  7. Serve while hot, accompanied by tomato ketchup or a dip of your choice!
